*铺好台布，摆show plate碟，并用展示碟定好位置。
*摆碟时左手托着碟底，碟边贴着腰，右手大拇指肌肉压住碟边，其余四指爪住碟的底部，摆放在座位正中，左右等距，show plate离台边2CM。 *摆餐具的顺序：扒刀－汤更－饭更－餐叉－牛油碟－牛油刀。
*具体要求：先把扒刀摆放在展示碟的左边，距离碟边0.5CM；汤更摆放在扒刀的右边，距离扒刀0.5CM，餐叉摆在展示碟的左边，距离碟边0.5CM，饭更摆在碟的上方，距离碟边0.5CM；牛油刀摆在牛油碟的三份之一位置。 *摆上高脚水杯、专用红酒杯，白葡萄酒杯。
*摆杯的要求：高脚水杯摆在扒刀上方，距离刀尖1CM，刀尖正对高脚杯的杯柄位置。
*红酒杯摆在扒刀正上方，刀距离红酒杯1CM。 *白酒杯摆在扒刀正上方，距红酒杯1CM *三只杯与对座的杯成平衡直线呈45度角，即与餐台的对角平衡。 *摆上相应颜色的席巾，摆放在展示碟中间。 *摆台时必须摆上盐瓶、胡椒瓶、糖盅共两套。 *以台面的中心饰物为界线，分开两边摆放。
*按顺序摆上用水杯盛装叠好的餐巾纸、牙签筒。
*摆完餐位后可站在餐椅的后边中间位置核对摆位是否正中。 *整理餐台与餐椅的距离，餐椅应与台布垂直。

垫盘居中，叉左刀右，刀尖向上，刀口向内。 盘前横匙，主食靠左，餐具靠右，其余用具酌情摆放。 酒杯的数量与酒的种类相等，摆法是从左到右，依次摆烈性酒杯，葡萄酒杯，香槟酒杯，啤酒杯。 西餐中餐巾放在盘子里，如果在宾客尚未落坐前需要往盘子里放某些物品，餐巾就放在盘子旁边。
